Hayman’s London dry was launched in 2008 and is the brand’s shot at the classic dry gin style. Ten botanicals are used, as with all Hayman's gins, and strong notes of crystallised lemon and orange peel paired with lavender are the first scents you’ll smell. dry orris root is the first flavour you’ll taste alongside pine and juniper as well as zesty lime. Herradura Suprema Tequila, 70cl

Believed to be one of the first extra Anejo tequilas invented Herradura suprema spends 49 months maturing in American oak casks. This gives it notably different flavours and characteristics when compared to other anejos. Mellow vanilla floods the nose and has other sweet notes including chocolate, honeyed apple and hot cinnamon spice. The flavour is rich in vanilla too with the apple notes remaining and toffee coming through, leading to a long bitter finish.

Highland Park 12yr Whisky, 70cl

A legend in its own right, 12-year-old highland park is an Orcadian classic. Made from the finest barley malted over peat fires and blended with the fresh waters of the isle, its character is intensely satisfying. Fresh peat notes stand out strongly against the classic malted barley and even heather comes through, offering a fresh, floral dimension. Medium-bodied and enhanced by its aromatic floral notes, this is one classic single malt.

Highland Park 18yr Whisky, 70cl

18-year-old highland park is an exceptional whisky that builds upon the already renowned reputation of its younger, 12-year-old brother. All the exceptional stand out notes you’d expect in a quality Orkney note are there with mature oak and aromatic smoke coming through in the nose. Hine Rare VSOP Brandy, 70cl

With honey sweetness in abundance Hine rare VSOP is a refined blend of Eaux de vie which balances selections from both the grande and petite champaign regions. the youngest Eau de vie in the blend is six years old, though they can be up to twelve and this maturation ensures the smooth, deep flavour connoisseurs lust after. Floral hints of jasmine support the warm honey and a final note of vanilla provide a rounded ending.

Hoxton Gin, 70cl

Five days steeping before distillation in a copper pot still create the unique and unusually flavoured Hoxton gin. Flavoured with sweet coconut, refreshing grapefruit, classic juniper, iris, tarragon and hits of ginger, Hoxton gin is different from your average gin. Unlike most other gins juniper is not the leading flavour and it ends on woody eucalyptus notes, a satisfying alternative to traditional gins. HOXTON PINK GIN, 50cl

Hoxton Pink Gin is created using natural and ethically sourced ingredients such as juniper, Gunpowder tea, rosehip, grapefruit, liquorice, chamomile, elderflower and orris. Clear pink colour with a tint of orange. On the nose, there’s a lovely a mixture of the floral character of roses backed by the firm tannin of tea. In the mouth, it is just off-dry, with a lovely balance between the sweetness and rose perfume on one hand, with the sharpness of citrus and the grip of tannin from the Gunpowder tea.

ILEGAL ANEJO TEQUILA, 70CL

For a Mezcal to be classed as an Anejo, it must be aged for 12 months in barrels before bottling. Ilegal tends to age theirs for a total of 13 months which helps it to develop beautiful honey-like characteristics that make it a very delectable spirit that one would expect from a longer aged Mezcal. This ageing process helps to show off the quality of the casks which have been used and really show off its character, making it perfect to be enjoyed one sip at a time.

ILEGAL JOVEN TEQUILA, 70CL

This unaged and ‘young’ mezcal does not have contact with any oak barrels (much like Blanco in the Tequilla category) and is bottled somewhat soon after distillation. Because there is no ageing process for this expression, this is certainly more fruit-focused than the aged mezcals within the category and is a carefully composed blend of sweet and smoke.

ILEGAL REPOSADO TEQUILA, 70CL

This is lightly aged for four months in oak barrels before bottling which helps to open and round this beautifully crafted example of a rested ‘Reposado’. This ageing process helps to draw out those beautiful notes of vanilla and spice but with a gentle undertone of smokiness that balances really well, that is less than that of its younger sibling. As a result, the smoke integrates exquisitely that creates a medium-bodied mezcal with those sweet highlights.
